Aam Panna: a Traditional Mango Cooler

Aam Panna is a traditional Indian summer drink made from raw green mangoes, cherished for generations as a refreshing way to stay hydrated during hot weather. Its naturally tangy mango flavor, combined with roasted cumin, black salt, ginger, mint, and a touch of spice, makes it both refreshing and delicious.

What makes Aam Panna special is its combination of traditional ingredients and cooling, hydrating refreshment. Raw mango provides vitamin C and antioxidants, while water and salt help support fluid and electrolyte intake during hot days. Cumin, mint, ginger, and lemon add digestive and refreshing qualities to the drink.

Unlike ordinary sugary summer beverages, this recipe brings together the bold flavors of Indian cuisine with a traditional summer refreshment, making every glass tangy, spicy, sweet, and incredibly refreshing.

  1. Raw Mango - 1Kg
  2. Sugar or Jaggery Powder - 100 Gms
  3. Black Salt - 1 Tbs
  4. Roasted Cumin powder - 1Tbs
  5. Black Pepper - 1/2 Tbs
  6. Green Chillie - 2
  7. Lemon - 1
  8. Mint Leaves
  9. Ice Cubes

Wash & Cook Raw Mangos

  1. Wash the raw mangoes thoroughly under running water. Peel them and transfer the raw mangos to a pressure cooker.
  2. Add 1 glass of water and ½ tablespoon salt. Close the pressure cooker and cook for 2–3 whistles, until the mangoes become soft.

Mesh the Mango

  1. Allow the cooked mangoes to cool slightly. Remove the mango seeds and separate the soft cooked flesh from the skin.
  2. Mash the cooked mango flesh well to separate the pulp and remove any remaining fibers or seed pieces.
  3. Transfer the mango pulp to a mixer grinder..

Add the Ingredients

  1. Add 100 g jaggery or powdered sugar, 1 tablespoon black salt, ½ tablespoon black pepper, and 1 tablespoon roasted cumin powder to the mango puree.
  2. Add 2 chopped green chillies and a small piece of fresh ginger for a refreshing spicy kick.
  3. Blend all the ingredients in the mixer until you get a smooth, well-combined Aam Panna concentrate.

Store the Concentrate

Transfer the prepared Aam Panna concentrate into a clean, airtight glass jar and refrigerate. For serving, mix 2 tablespoons of the concentrate with about 300 ml of chilled water whenever you want a refreshing summer drink.

Prepare Your Drink

Take a serving glass and add fresh mint leaves and ice cubes. Add 2 tablespoons of the Aam Panna concentrate, followed by a splash of fresh lemon juice. Fill the glass with chilled water and stir well until everything is evenly mixed.
