In this Cooking Basics Instructable, I will show you how to make perfect scrambled eggs every time.

Supplies

Ingredients:

  1. 3 Eggs
  2. 2 tsp of Water or Milk
  3. 2 tsp of avocado oil, olive oil, butter, or bacon grease. (There are other fats you can use too)
  4. Salt and pepper to taste

Tools:

  1. Good nonstick pan. I love my GreenPan. (Affiliate link)
  2. Spatula/turner
  3. Fork or whisk
  4. Bowl

Whisk Those Eggs

Put your skillet/pan on the burner and set the heat to medium.

Add the eggs to a bowl along with the water or milk, and mix with a fork or whisk until well mixed.

TIP: The water or milk is optional, they are not needed. But, when added, they tend to make the finished scrambled eggs fluffier.

Add the oil of choice, and then, once the pan is hot, add the eggs. The technique I use is to wait a few seconds, then pull the egg from the edges to the center, and then chop down with the spatula; keep repeating until you get the eggs cooked out you like it. I prefer my eggs to be on the drier side, so once there is no longer any glistening of egg, the scrambled eggs are ready. If you like yours on the wetter side, remove them when there is still some glistening to them.

NOTE: Keep in mind that when you take the eggs off the burner, there will still be a little bit of residual cooking.

Season and Serve

Now put the scrambled eggs on a plate and season with salt and pepper to your taste.

NOTE: You can also season the eggs right after cracking them into the bowl. However, do NOT let them sit very long before cooking, the salt can make the eggs rubbery and too dry once cooked.
