High Protein Gluten Free Brownies That Actually Taste Good

High-Protein Brownies I Can't Believe These are Made with Cottage Cheese!

In this Instructable, I will show you how to make high-protein brownies that are also gluten-free. These taste really good too! And they are pretty healthy.

Supplies

Ingredients:

  1. 3/4 cup of cottage cheese (170g)
  2. 2 Tbsp of sweetener (sugar, stevia, honey, etc.) (28g)
  3. 1/8 tsp of salt (1/2g)
  4. 2 large eggs
  5. 2 Tbsp of cocoa powder (14g)
  6. 1 1/2 tsp of baking powder (7g)
  7. 1 scoop of whey protein, vanilla or chocolate (30g)
  8. 1/2 cup of chopped walnuts, optional (60g)
  9. 1/2 cup of chocolate chips, optional (80g)

Equipment:

  1. Bowl
  2. Whisk
  3. Sifter
  4. Spatula
  5. 5x9-inch bread pan
  6. Parchment paper, optional
  7. Food processor, optional

Make the Batter

Preheat the oven to 375F/190C.

Add the cottage cheese, sugar or other sweetener, and the eggs to a large bowl and mix with a whisk or food processor.

NOTE: If you don't want large chunks of cottage cheese in the final baked brownies, use a food processor or blender to break them down, and make sure to use small curd cottage cheese.

Next, add the salt, baking powder, cocoa powder, and whey protein powder to a shifter or sieve, and add it to the bowl.

Stir or whisk those ingredients in, followed by the walnuts and chocolate chips, which are both optional.


Bake Those Brownies

Line a small baking pan, like a 5x9-inch loaf pan, with parchment paper, or spray it with some cooking oil or use shortening.

Add all the batter to the pan. Then bake it in the oven for 20 to 25 minutes, until a toothpick comes out clean.

Cut and Serve

Allow it to cool and then cut into squares. I usually make 8 brownie squares.

Enjoy! I like to eat them for a high-protein snack during the day, or for breakfast. Kind of nice eating brownies for breakfast!
