Ingredients:

• 300g / 10.5 oz Chicken wings

• 350g / 12 oz Baby potatoes

• 160g / 1 medium Cucumber

• 1 tsp Gochujang

• 1 tbsp Sesame oil

• 1 tbsp Sesame seeds

• 1 tbsp Vinegar

• 1 tbsp Soy sauce

• 1 tsp Salt and pepper

• 1 tsp Chili flakes

• 1 stalk Green onion

• 2 cloves Garlic

• 1 tsp Lemon juice

• 1 tsp Honey

• 10g / 2 tbsp Parmesan (grated)

Scrub and clean the baby potatoes and boil them for about 15 minutes. Once done, place them on a paper towel to dry. Heat a pan over medium heat with a little olive oil. Place the potatoes in the pan and smash them using a burger smasher or the bottom of a glass bottle. Season with salt, pepper and grated Parmesan on each side. Fry until the skin is golden and crispy.

Cut the cucumber into approx 1.5 cm/0.6 inch thick pieces and place them in a sealable bag. Cut the green onion into large pieces as well and add them to the bag. Add the grated garlic, sesame seeds, sesame oil, soy sauce, chili flakes, vinegar, salt and pepper. Seal the bag and mix lightly by hand to distribute the dressing evenly. Use a kitchen mallet to gently smash the cucumbers until they break into halves or quarters. Remove from the bag and place in a serving bowl.

Hot Wings

Wash and dry the chicken wings with a paper towel. Place them in a bowl and season with salt, pepper and a squeeze of lemon juice, ensuring they are well-coated. Over medium heat, add a spoonful of olive oil to a pan and place the wings skin-side down. Fry for 5 minutes and flip the wings. Cover the pan with a lid and fry for an additional 10 minutes.

Glaze and Serve

While the wings are frying under a lid, whisk together 1 tsp of gochujang, 2 tbsp of water and 1 tsp of honey in a small bowl. Remove the lid from the pan, spread the gochujang sauce onto the wings and fry for about one more minute, so the sauce thickens and glazes the wings. Enjoy this flavor bomb of a meal!
