How to Make Lasagna With Tortilla Wrappers

Lasagna + Tortilla = ???

I’m not saying this recipe is a war crime, but I’m also not saying Italians or Mexicans will ever speak to me again... We are layering tortillas like pasta sheets and calling it "fusion", just so I have a legal defense for committing a kitchen felony. Watch me build this delicious, cheesy dish that’s technically neither a lasagna nor a tortilla, but tastes way too good to be this wrong!

Note: You can make your own tortillas using my method below, or just use store-bought ones if you prefer that.

Ingredients:

Tortillas (4 pieces):

150g Flour

80g Water

1/2 tsp Yeast

A pinch of Salt


Ground beef sauce:

350g Ground Beef

150g Tomato Purée

50g Leek

1 Fresh Chili

250g Mozzarella

1 Beef bouillon cube

Making the Tortilla (optional)

For the tortilla dough mix the flour and yeast together in a bowl, then add the salt and water. Keep adding water little by little until you get the right consistency. Leave it to rest for 15 minutes. Divide the rested dough into four equal portions and shape them into balls. Roll each ball into a round tortilla with a rolling pin (approximately 2-3mm thin and 15cm in diameter). Lightly toast each tortilla in a pan over low heat for about 30 seconds per side. Put them on a plate with kitchen paper and cover with a cloth, so they won't dry out.

Finely dice the leek and chili. Heat a pan over medium heat and sauté the leek for about a minute. Add the ground beef, breaking it up well to ensure there are no lumps. Stir in the spice mix, the fresh chili and the beef bouillon cube. Fry it for a few minutes, then pour in the tomato purée. Simmer for about 5 more minutes until you get a thick sauce and set aside to cool down a bit.

Assemble & Bake

Oil a baking dish and begin layering by placing a tortilla at the bottom, followed by a layer of meat sauce and a spread of grated mozzarella cheese. Repeat the layers with the remaining ingredients. Place the dish in a preheated oven at 185°C (360°F). Bake for about 10 minutes, until the cheese is melted and golden brown.
