How to Make Mozzarella Garlic Rolls
I love the wholesome feeling of these freshly baked bread rolls on a cold winter day! The melting mozzarella cheese, fresh green garlic and buttery aroma will bring it to the next level of comfort food! Join me (and Chief Inspector Owl) on a cooking adventure to make these awesome cheesy rolls!
Supplies
Ingredients:
450g Flour
150g Butter
100g Sour cream
150g Milk
500g Mozzarella cheese (block)
2 Eggs
20g Fresh yeast
1 tbsp Salt
1 tbsp Erythritol (If you have fruit sugar is even better to help the yeast bloom)
For the topping:
20g Butter
10g Green garlic
Making the Dough
In a large bowl, combine the warm milk, sweetener and yeast. Mix with a spoon and leave it to proof for a few minutes. In the meantime, melt the butter over low heat. Separate the eggs, keep the egg whites in a small bowl (you will use these to brush the dough later). Add the egg yolks, melted butter, and sour cream to the yeast mixture and mix well. Gradually add the flour and salt. Mix with a spoon until a dough ball forms. Cover the bowl and leave the dough to rise until it has doubled in size.
Prep & Assembly
Once ready, divide the dough into small balls (approximately 50g each). Using a rolling pin, stretch each ball vertically. Brush the surface with egg whites and place a line of grated mozzarella in the center. Fold the sides over to cover the cheese, then roll the dough from one end to the other to form a roll shape. Press down lightly and place the roll into a buttered baking dish. Repeat with the remaining dough.
Baking
Preheat your oven to 185°C (360°F). Before baking, brush the rolls with a mixture of soft butter and fresh green garlic. You can also add a little extra cheese to the sides of each roll. (Alternatively, you can apply the garlic butter after baking for a fresher aroma). Bake for 25–30 minutes using top and bottom heat.
