How to Make Tortilla Chips With Salsa at Home
Buying tortilla chips and salsa at stores has become outrageously expensive, especially for a bag mostly filled with air and a tiny jar of bland dip. In today's video we're making both at home, completely from scratch! You'll be amazed at how easy this snack is to throw together, and it tastes so much better than anything you can buy at the grocery store. Plus, you'll know exactly what ingredients are going into your food, keeping it free from artificial preservatives!
Supplies
Ingredients:
For the tortillas:
• 100g / 3.5 oz Corn flour
• 100g / 3.5 oz All-purpose flour
• 170ml / 5.7 fl oz Water
• 1 tsp Yeast
• 1 tsp Sugar
• 1 tsp Salt
For the salsa sauce:
• 30g / 1.1 oz Onion
• 30g / 1.1 oz Small sweet pepper/ Bell pepper (green or yellow)
• 30g / 1.1 oz Cherry tomatoes
• 30g / 1.1 oz Ketchup
• 1 tsp Salt, white pepper and garlic powder mix
• 1 tbsp Sugar (or sweetener)
• 1 tbsp vinegar
• 100ml / 3.4 fl oz Water
• 1 tsp Cornstarch
Spice mix for the chips:
• 1 tsp Salt
• 1 tsp Smoked salt
• 1 tsp Garlic powder
• 1 tsp Paprika
• 1 tsp White pepper
• Oil for frying
Make the Dough
Combine the two flours, sugar, yeast and salt with the water. Mix until a dough forms, then cover it and leave it aside for about 10 minutes. Divide the dough and roll it into small balls (about 10g each). Roll each ball into a disc using a rolling pin. Cut out a perfect circle by tracing around a plate, or using whatever method you find easiest.
Make the Tortillas
Heat a pan over low heat. Toast each tortilla in the dry pan until bubbles appear on each side (about a few seconds per side). Place them on a plate lined with paper towels and cover them with a clean cloth so they don't dry out.
Make the Chips
Heat oil for deep frying to about 170°C (340°F). Cut each tortilla into 8 triangles. Fry them a few at a time (about 3 to 5 chips). They fry very quickly: in just two seconds they will turn golden and bubbly! Transfer the chips to a bowl lined with paper towels. Toss the chips with the spice mix (or your preferred seasoning) while they are still hot so the spices stick.
Salsa Sauce
Cut the onion, pepper and tomatoes into small cubes. Place them in a pan with a drizzle of olive oil and cook for a minute over medium-low heat. Add the seasoning mix and vinegar, and let it cook for another minute. Stir in the ketchup and water, bring to a boil, then lower the heat. Make a slurry by mixing 1 tsp of cornstarch with 2 tbsp of water, then add it to the salsa. Stir well and bring it to a boil for a couple of seconds to thicken. Taste the sauce and add more sugar or salt if desired, then turn off the heat and let it cool down.
