The Sunshine Yellow "Pittu" : Traditional Healthy Meal
β¨ Today, we're making a delicious, Sunshine Yellow "Pittu"! ππ₯₯
This special version is made using corn π½ and cassava πΏ, making it not only incredibly tasty but also a healthy and nutritious meal.
Pittu is one of Sri Lanka's most beloved traditional foods, enjoyed by generations for centuries. It's a timeless dish that has been passed down through families and remains a favorite on Sri Lankan dining tables today.
π So, without any further delay, let's get started and see how to make this beautiful Sunshine Yellow "Pittu"! π¨βπ³β¨
Supplies
Pittu:
- Rice Flour Cup 1
- Cassava (grated) Cup 1
- Corn 1
- Coconut (grated) Cup 1
- Salt tsp 1
- Turmeric Powder
Lunu Miris:
- Medium size onion 2
- Lemon
- Salt tsp 1/2
- Chili flex tbs 2
- Black paper tbs 1
- Maldives Fish (dry fish) tbs 1
Fresh Coconut Milk:
- Coconut (grated) Cup 1
- Salt tsp 1/2
Tools

- Grater
- Blender
- other basic kitchen appliances
Preparing the Cassava π₯
To begin, thoroughly wash and clean the fresh cassava roots. π₯π¦ Remove any dirt, peel off the skin, and rinse them well. You can see the clean, peeled cassava in the first photo. πΈβ¨
Next, grate the cassava using a grater until all of it is finely shredded. Once it's ready, add a small amount of Turmeric Powder. π This gives the cassava its beautiful natural golden-yellow color, making the Pittu look even more vibrant and appetizing. πβ¨
Add the Turmeric Powder gradually, mixing a little at a time until the cassava turns a soft, light golden yellow color.
Since fresh cassava naturally contains quite a bit of moisture, gently squeeze the grated cassava to remove some of the excess water. This will help create the perfect texture for the Pittu. πͺπ§
When you're done, your cassava should have a beautiful light golden-yellow color, just like the one shown in the fourth photo. πΈπ
Mixing With Fresh Coconut π₯₯
In this step, it's time to combine the grated cassava with the freshly grated coconut. π₯₯β¨
Mix everything together well until the cassava and coconut are evenly combined.
When grating the coconut, make sure to grate it as finely as possible. This helps it blend evenly with the cassava, giving the Pittu a soft texture and a rich, delicious coconut flavor. ππ
Preparing the Sweet Corn π½
Next, let's prepare the sweet corn. π½β¨
Start by boiling the corn and allowing it to cool completely. Once it's cool, gently separate the kernels from the cob, just as shown in the second photo. πΈ
After removing all the kernels, place them into a blender and give them a quick blend. The goal is not to make a smooth puree. Instead, blend the corn just enough so that it remains slightly chunky, creating a nice texture for the Pittu. π

Combining the Ingredients π½
Now it's time to bring everything together! π₯₯π½π
Add the blended sweet corn to the cassava and grated coconut mixture that we prepared in the second step. Mix everything together thoroughly until all the ingredients are evenly combined. β¨
While mixing, don't forget to add 1 teaspoon of salt. π§ This will help enhance the natural sweetness and bring all the flavors together perfectly. π
The Final Pittu Mixture πΎ
We're now at the final step of preparing our Pittu mixture! πβ¨
Add 1 cup of rice flour to the mixture we prepared earlier. πΎ Then, mix everything together thoroughly until the cassava, sweet corn, grated coconut, and rice flour are evenly combined.
Once everything is well mixed, you'll have a beautiful golden yellow Pittu mixture, just like the one shown in the second photo. πΈπ The texture should be light, crumbly, and perfectly blended ready for steaming! π₯₯π½π
Steamer β¨οΈ
Now it's time to steam the Pittu. β¨οΈπ
For this step, I'm using a simple traditional Sri Lankan steamer called a Pittu Bambuwa. This is a special steamer made specifically for preparing Pittu. π±π°β¨
If you don't have a Pittu Bambuwa, you can also use a regular steamer.
In the bottom section of the Pittu Bambuwa, add water. The top cylinder section is where we fill the prepared Pittu mixture and steam it until perfectly cooked. πΎπ₯₯π½
Filling the Steamer π₯£
Here, I've filled the top cylinder of my Pittu Bambuwa with the prepared Pittu mixture. πΎπ Once it's filled, secure it by attaching the top cap firmly. β¨
Before adding the mixture, don't forget to place the perforated metal disc inside the bottom of the cylinder. This prevents the mixture from falling through while allowing the steam to circulate evenly. β¨οΈ
If you're using a regular steamer, simply fill the Pittu mixture into any heat safe steaming mould or container of your choice. π₯£ Nowadays, you can find a variety of steaming moulds in different shapes and sizes that are perfect for making Pittu. I'm sure you'll have no trouble finding one that suits your needs. π
Steaming the Pittu β¨οΈ
Next, fill the bottom chamber of the Pittu Bambuwa with water until it's about three-quarters full. π§ Then attach the cylinder filled with the Pittu mixture securely to the base.
Place the steamer over heat and allow the water to boil. Once steam starts rising, let the Pittu cook gently until it's fully steamed. β¨οΈπ
Depending on the type and size of the steamer you're using, this usually takes 30β50 minutes. The Pittu is ready when it's cooked through and has a soft, fluffy texture. πΎπ₯₯π½β¨
Making the Spicy Lunu Miris πΆοΈ
While the Pittu is steaming, let's prepare a delicious Lunu Miris. πΆοΈβ¨
This is a spicy traditional Sri Lankan side dish that pairs perfectly with Pittu. Although it's quite spicy on its own, it's absolutely delicious when eaten with Pittu. ππ
To make it, roughly chop 2 medium sized onions and add them to a blender along with:
- π§ 2 medium onions
- πΆοΈ 2 tbs Chili Flakes
- β« 1 tbs Black Pepper
- π 1 tbs Maldive Fish (dried fish flakes)
- π§ 1/2 tsp Salt
Blend everything together until you get a thick, coarse paste, similar to the one shown in the third photo. πΈβ¨
If you prefer a milder version, simply add a little more onion and reduce the amount of chili flakes and black pepper to suit your taste. π
Even though the Lunu Miris is quite spicy, you'll only need a small amount with each bite of Pittu, so it balances the flavors beautifully rather than being overpowering. πΎπΆοΈ
Finally, squeeze in the juice of one fresh lemon π and mix everything well by hand. The lemon adds a refreshing tanginess that brings all the flavors together perfectly. π
Making Fresh Coconut Milk π₯₯
Since our Pittu has a slightly firm texture, it's nice to serve it with something that makes it even softer, creamier, and easier to enjoy. π₯₯β¨
For that, I'm making some fresh homemade coconut milk.
Add 1 cup of grated coconut to a blender with a small amount of water, then blend until it becomes rich and creamy. π₯₯π§
Once blended, strain the mixture to remove the coconut pulp, leaving you with smooth, fresh coconut milk. β¨
Finally, add a small pinch of salt and give it a good stir. π§
The creamy coconut milk perfectly balances the spicy Lunu Miris, so don't worry about the heat! π Together, they make an incredibly delicious combination with the Pittu. πππΆοΈπ₯₯
Ready to Serve π½οΈ
Once the Pittu is fully steamed, carefully remove it from the steamer. β¨οΈπ You'll be rewarded with a beautiful, fluffy, golden yellow Pittu that's ready to enjoy.
Using my Pittu Bambuwa, I had to steam it a few times to prepare several batches of Pittu. π
Now that everything is ready, all that's left to do is serve the Pittu with the spicy Lunu Miris πΆοΈ and fresh coconut milk π₯₯.
